Pork tenderloin has become known as the "other white meat". Lean and nutritious, it is easy to prepare and very tasty. This recipe for a Pork Tenderloin Asian Style is perfect for a dinner party or a family meal. This recipe is quick and easy. The tenderloin needs to marinate from 30 minutes to overnight. Perfect for preparing ahead as you can marinate overnight. Also perfect when needed more quickly as marinating and baking can be done in around an hour. Along with the pork are some unique vegetables, red onion, red bell pepper, and zucchini, which are baked and served with the tenderloin. Easy and delicious!
PORK TENDERLOIN ASIAN STYLE
1/2 cup bottled garlic ginger marinade
1/4 cup sliced green onion
1 (approx. 1 lb) pork tenderloin
1 tbsp olive oil
1 red onion, cut into chunks
1 medium red bell pepper, cut up into 1" pieces
1 medium zucchini, sliced
Pour the marinade and the green onion slices into a gallon-sized zip-top plastic bag. Add the pork tenderloin and seal bag. Turn the bag so the tenderloin is evenly coated with marinade. Place the bag in a pan and refrigerate at least 30 minutes or overnight.
Preheat oven to 425 degrees.
Combine the red onion, olive oil, bell pepper, and zucchini in a mixing bowl; toss to coat evenly. Place vegetables in a roasting pan and place the marinated pork atop the vegetables. Be sure to discard the marinade. Bake 25 minutes or until cooked through. Remove from oven and loosely cover with aluminum foil. Allow to stand for 10 to 15 minutes before slicing. Place meat on serving platter surrounded by the vegetables.
