Wine lovers enjoy serving several different wines to their dinner guests. Dinner parties allow one to do just that. At a dinner party it is quite appropriate to serve Champagne first, either with hors d"oeuvres or as the aperitif. Champagne is special and is able to be served on its own without food. People understand the distinctiveness of Champagne and are willing to allow time for the Champagne to be opened and tasted ceremoniously. Serving Champagne is a compliment to the guests.
The flavors of the wines served must not only blend well with the food on the menu but each vino served must have a better flavor than the one prior to it. There are a few simple rules that may be followed when serving to guests. Remember these are just suggestions on the best way to serve wines with their flavors in mind. If you are serving two wines at dinner, you could start with a white wine at the beginning of dinner followed by a red wine during the main course. But one could also serve a light, red before a rich white and still have an awesome meeting of palates. Or, a simple white would be perfect to serve before a richer second white. One could certainly mix and match reds, whites, rose, blushes. Just remember a milder, simpler vino should always precede a heavier, more robust wine.
Keep in mind: white wine to precede red wine, light wine served prior to a heavy wine, dry wine is best served prior to sweet wine, and a simple vino would be served first and then a complex, rich wine.
